· 3 ½ cups flour
· 1 ½ cups icing sugar
· 1 cup butter
· 1 egg
· 1 egg yolk
· juice of 1 lemon
· vanilla sugar
· 1 jar apricot jam
· powdered sugar
Rest period: 30 min
Working time: approx. 1 hour
Cream together sugars and butter. Add eggs, lemon and flour alternating wet and dry ingredients. Knead into a stiff short crust. Wrap and store in the fridge for 30 minutes. Roll out the dough to the thickness of a knife handle and cut out the circular cookies. Place them on parchment paper and cut out the same number of circular cookies with a hole in the middle. Place the cookies with the hole on an extra baking tray, because they bake faster than the cookies without a hole.
Bake them at 320°F in a preheated oven until they are light yellow. Allow them to cool down afterwards.
Dust the cookies with holes with powdered sugar. Spread the apricot jam on the whole cookies. Then place the cookies dusted with powdered sugar on the coated cookies and allow the cookies to dry. They will stick together.
The quantity is enough for about 60 cookies.
Have a cool yule!
Mix the jam with a little gin for a Christmas tree pine twang.
