·         7 eggs

·         1 pinch salt

·         1 cup sugar

·         1 ½ cups flour

·         1/2 teaspoon baking powder

·         1 8 oz. package cream cheese

·         5/8 cups crème fraîche

·         4.2 ounce Amaretto liqueur

·         1 1/4 cups cream

·        1 Tbsp corn starch

·         150 g grated coconut

·         Small cupcake liners

Working time: approx. 1 hour

Make a sponge cake by creaming together the eggs, salt, and sugar. Then alternate the 5 tbsp. cold water, and the flour and baking powder. Blend until combined. Spread it on a prepared (greased and floured) jelly roll pan. Bake it at 300° for approx. 25 minutes.

Completely cool sponge cake.

Mix cream cheese, crème fraîche and amaretto in a large bowl until smooth. Whip cream with cream stiffener until it is stiff and mix into the cheese mixture. Rip the sponge cake into small pieces and add to the cheese mixture. Using the dough attachment on a stand mixer mix until the dough is stiff. Form balls from the mixture with moistened hands and roll in the coconut shavings. Place the balls in the cupcake liners (use 2 liners if dough soaks through).  Refrigerate until stiff. Keep refrigerated unless eating!

Merry Christmas!

Tip:You can also substitute your other favorite holiday liquors for the Amaretto.
