Häfele´s Wood Shavings
4 2/3 cups flour
1 teaspoon baking powder
½ cup sugar
1/4 cup vanilla sugar
½ lemon peel, grated
1/4 cup rum
9 Tbsp. butter
Shortening for frying
Rest period: 1 hour
Working time: approx. 25 minutes
Mix the flour with baking powder and knead with sugar, vanilla sugar, lemon peel, eggs, rum and butter to a smooth dough. Wrap it into a foil and put it in the fridge for 1 hour.
Tip: Instead of vanilla sugar, use the inside of a vanilla bean.
Roll out the dough to a thickness of approx. 1/8 inch thick. Cut out 1.25” x 4” rectangles. Cut a 2” long slit in the middle and pull the dough flap through the slit. Heat the shortening to 380 degrees and fry the shavings in a deep skillet until they are golden yellow. Drain them on a kitchen paper and serve sprinkled with icing sugar.
Tip: The frying fat has the right temperature when bubbles rise on a wooden spoon. Remove the shavings with a slotted spoon.
